Our Fab Head Chef Lampa Mortimer brings you her homemade Phad Kra Prow (a Stir Fry Beef with Chilli and Basil)..

Ingredients

3 Tbsp vegetable oil
12 oz. beef, sliced thinly against the grain and mixed with 1 teaspoon oil and 2 teaspoons corn-starch
10 cloves garlic, chopped
3-4 Red Chilli sliced thinly
1 small onion, thinly sliced
2 teaspoons soy sauce
1 teaspoon dark soy sauce
1 teaspoon oyster sauce
1 tablespoon fish sauce
½ teaspoon sugar
1 cup Thai basil leaves, packed
½ Cup Chicken broth
Cilantro, Spring Onions or fry egg to garnish.

Method

Heat the oil in a Wok or large, heavy Frying Pan over a high heat. Add the garlic and red Chilli to the wok and stir-fry for about 20 seconds. Add the Beef, cook for 2 minutes then add Onions, along with the Soy Sauce, Dark Soy Sauce, Oyster Sauce, Fish sauce, Sugar and finally the Chicken broth. Stir-fry for another few minutes, and then fold in the Thai basil until it’s just wilted.

Serve with Jasmine Rice, and garnish with Cilantro & Spring Onions.
